Slune\u010dnice se tak m\u016f\u017ee st\u00e1t d\u016fle\u017eitou surovinou budouc\u00edch vegansk\u00fdch alternativ masa.<\/p>\n\n\n\n<p>Slune\u010dnici si v\u011bt\u0161ina z n\u00e1s spojuje hlavn\u011b s olejem nebo sem\u00ednky. Nov\u00fd v\u00fdzkum ale ukazuje, \u017ee tato nen\u00e1padn\u00e1 rostlina m\u00e1 mnohem v\u011bt\u0161\u00ed potenci\u00e1l \u2013 m\u016f\u017ee se st\u00e1t z\u00e1kladem modern\u00edch n\u00e1hra\u017eek masa. T\u00fdm v\u011bdc\u016f z brazilsk\u00fdch instituc\u00ed ITAL a UNICAMP ve spolupr\u00e1ci s n\u011bmeck\u00fdm institutem Fraunhofer IVV vyvinul potravinu ze slune\u010dnicov\u00e9 mouky, kter\u00e1 svou strukturou i v\u00fd\u017eivovou hodnotou p\u0159ipom\u00edn\u00e1 maso. Z\u00e1kladem je mouka vznikl\u00e1 po vylisov\u00e1n\u00ed oleje ze slune\u010dnicov\u00fdch semen. Aby byla vhodn\u00e1 pro lidskou konzumaci, je nutn\u00e9 odstranit slupky a n\u011bkter\u00e9 fenolick\u00e9 l\u00e1tky. Ty sice chr\u00e1n\u00ed rostlinu, ale mouce dod\u00e1vaj\u00ed tmavou barvu, ho\u0159kost a sni\u017euj\u00ed vst\u0159eb\u00e1v\u00e1n\u00ed \u017eivin. Po jejich odstran\u011bn\u00ed vznik\u00e1 sv\u011btl\u00e1 mouka s neutr\u00e1ln\u00ed chut\u00ed a v\u016fn\u00ed, co\u017e je velk\u00e1 v\u00fdhoda oproti jin\u00fdm rostlinn\u00fdm protein\u016fm.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"945\" height=\"678\" src=\"https:\/\/www.spzo.cz\/wp-content\/uploads\/2026\/02\/4a-26.jpg\" alt=\"\" class=\"wp-image-4502\"\/><\/figure>\n\n\n\n<p>V\u00fdzkumn\u00edci p\u0159ipravili dva typy \u201eslune\u010dnicov\u00fdch burger\u016f\u201c \u2013 jeden z mouky z pra\u017een\u00fdch semen a druh\u00fd z tzv. texturovan\u00e9ho slune\u010dnicov\u00e9ho proteinu, kter\u00fd m\u00e1 vl\u00e1knitou strukturu podobnou masu. Sm\u011bsi doplnili raj\u010datov\u00fdm pr\u00e1\u0161kem, ko\u0159en\u00edm a kombinac\u00ed slune\u010dnicov\u00e9ho, olivov\u00e9ho a ln\u011bn\u00e9ho oleje. Po upe\u010den\u00ed n\u00e1sledovalo testov\u00e1n\u00ed chuti, textury i chemick\u00e9ho slo\u017een\u00ed. L\u00e9pe si vedla varianta z texturovan\u00e9ho proteinu. M\u011bla pevn\u011bj\u0161\u00ed konzistenci, vy\u0161\u0161\u00ed obsah b\u00edlkovin a tak\u00e9 zdrav\u00e9 tuky, zejm\u00e9na mononenasycen\u00e9 mastn\u00e9 kyseliny. Z nutri\u010dn\u00edho hlediska zaujala i vysok\u00fdm obsahem miner\u00e1l\u016f \u2013 jedna porce pokryla t\u00e9m\u011b\u0159 polovinu denn\u00ed pot\u0159eby \u017eeleza, dv\u011b t\u0159etiny zinku a t\u00e9m\u011b\u0159 cel\u00e9 doporu\u010den\u00e9 mno\u017estv\u00ed ho\u0159\u010d\u00edku a manganu.<\/p>\n\n\n\n<p>Velkou v\u00fdhodou slune\u010dnice je i jej\u00ed udr\u017eitelnost. Slune\u010dnicov\u00fd olej se ji\u017e b\u011b\u017en\u011b vyr\u00e1b\u00ed v Evrop\u011b a p\u011bstov\u00e1n\u00ed slune\u010dnice v Braz\u00edlii roste. Rostlina nav\u00edc nen\u00ed geneticky modifikovan\u00e1, co\u017e oslovuje spot\u0159ebitele hledaj\u00edc\u00ed \u201eclean label\u201c a non-GMO potraviny. Podle hlavn\u00ed autorky studie Marie Pacheco je kl\u00ed\u010dem k \u00fasp\u011bchu technologick\u00e9 zpracov\u00e1n\u00ed, nap\u0159\u00edklad extruze, kter\u00e1 vytv\u00e1\u0159\u00ed masov\u011b p\u016fsob\u00edc\u00ed vl\u00e1knitou strukturu.<\/p>\n\n\n\n<p>V\u00fdzkum tak ukazuje, \u017ee slune\u010dnice nemus\u00ed b\u00fdt jen zdrojem oleje, ale i plnohodnotn\u00fdch rostlinn\u00fdch b\u00edlkovin.
